Pazhankanji is old economy: last night’s rice, covered with water, eaten next morning with salt, buttermilk, a shallot and a chilli — the breakfast that carried generations of field workers through until noon. It is also, by accident, decent starch chemistry. When cooked rice cools, part of its gelatinised starch re-crystallises into resistant starch — a form that digests slowly in the small intestine or not at all, feeding gut bacteria instead of the bloodstream. Overnight soaking encourages mild lactic fermentation, and the resulting gentle acidity slows stomach emptying a little further. The net effect is measurable and modest: the same rice, eaten the pazhankanji way, produces a flatter sugar curve than eaten fresh and steaming.
